Why our Short Ribs are special and why we only sell 3 Bone Short Ribs:
Short ribs come with different numbers of bones — mainly 3 bones or 4 bones. The main difference is in size and how much meat they have.
3-Bone Short Ribs:
These are larger and have more meat on each rib. They usually come from the middle part of the rib section, so they’re juicier and more flavorful. They’re considered better quality and are the best for smoking because they have more fat and connective tissue, which makes the meat tender and tasty after slow cooking or smoking.4-Bone Short Ribs:
These are smaller and tend to have less meat. They often come from the ends of the rib section and aren’t as good for slow smoking.
You might wonder why we don’t sell USDA PRIME short ribs, which are known for having the most marbling and being the highest quality. The reason is that short ribs are naturally more marbled by nature, no matter the grade.
We choose to sell USDA Choice instead of Prime because we work with only the best farms and sources. Our USDA Choice short ribs are actually more marbled and higher quality than many USDA Prime ribs you’ll find on the market.
